Compass Scotland launches advanced apprenticeship program

Compass Scotland has teamed up with famous two-michelin star chef Stephen McLaughlin to launch its first advanced apprentice program, “Elevate.”

Designed to identify and develop Scotland’s next generation culinary leaders, Elevate is an 18-month training programme at Sous Chef level or above, combining leadership with business development and hands-on experience.

The purpose of this program is to improve culinary skills, introduce the foundation of leadership, and promote awareness of commercial and sustainability, with SVQL7 Hospitality Supervision and Leadership partnering with Glasgow College to bring modern apprenticeships.

The selected chef will earn industry-leading mentorship with exclusive training, workshops and guidance provided by Stevie McLaughlin, head chef at Restaurant Andrew Fairy, two of Scotland’s longest standing Michelin star restaurants.

The Elevate program runs in parallel with the Compass Group UK & Ireland Apprenticeship Framework and serves as a route to the prestigious forward in the Marcus Wareing program.

Compass Scotland has over 20 apprenticeship programs, including cooking, home front, facility management, management, customer service and management.

“We’ve been working hard to get into the world,” said Jonathan Foot, Skills and Early Career Director for Compass Group UK and Ireland. This initiative not only helps chefs provide superior skills and knowledge, but also helps shape the future of the industry. ”

Stevie McLaughlin, head chef at restaurant Andrew Fairy, added: I have loved participating in Compass Scotland’s apprenticeship program for the past few years and want to start working with senior chefs. My advice to everyone who works in the kitchen is to learn something new every day. This program is a perfect example of this. ”
